Chapter 1: Food Service Sanitation
VIII: Structural Requirements and Sanitary Controls

1-56. Introduction.

Department of the Navy
Bureau of Medicine and Surgery

All Navy and Marine Corps food service facilities ashore and afloat must be maintained scrupulously clean, clear of refuse and garbage, and free of infestations of rodents and insects. This section contains requirements designed to achieve this objective. Basic structural standards must conform to the requirements in this chapter, the Department of Defense Construction Criteria Manual, DoD 4270.1M, and NAVSEA S9-AAO-AA-SPN-010/GEN-SPEC, General Specifications For Ships of the United States Navy, whichever is applicable. The installation medical authority (preventive medicine department) should be specifically involved with design review of all new construction and rehabilitation of Navy and Marine Corps food service facilities at shore stations.
