Chapter 1: Food Service Sanitation
Section III: Sanitary Requirements and Controls for Milk and Milk Products
1-22. Laboratory Examinations.
Department of the Navy
Bureau of Medicine and Surgery
1. Analysis and laboratory examinations of milk and milk products must conform to procedures in the latest edition of Standard Methods for the Examination of Dairy Products published by the American Public Health Association. Bacteriological examination of milk and milk products should be made routinely and whenever contamination or nonconformance to contract specifications is suspected. Local, State, Federal, and Armed Forces laboratories are available to perform examinations. Although NAVENPVNTMEDUs no longer perform bacteriological examinations of dairy products on a routine basis, these units will provide training and guidance to enable commands to develop this capability.
2. Samples of dairy products taken to determine contract compliance must be submitted to an appropriate Army area laboratory or other laboratory approved by the Army Surgeon General's Office. Capability of the particular laboratory to perform the required test must be determined prior to submission of samples. A list of laboratories may be found in NAVSUP PUB 486, Volume 1, Article 4002.
